You pound out your fillet, open it, peel out the one you just did, then add another. No sticking your hand into a plastic bag and getting it all covered with raw meat juices, or having to wash your hands between each fillet. With this you just grab your tongs to handle the meat, much easier to get the meat to lay flat. Really speeds up the process.
