It works very quickly - typically 15 minutes as recommended. Do not over do with more time. We especially love it with the London Broil or Round cuts of beef. Because of this particular seasoning/tenderizer "London Broil" beef has become our most favorite cut of beef to season and grill. Particularly good on Tri-Tip for the BBQ. We make it up in 1/2 water - 1/2 red wine. You pound out your fillet, open it, peel out the one you just did, then add another. No sticking your hand into a plastic bag and getting it all covered with raw meat juices, or having to wash your hands between each fillet. With this you just grab your tongs to handle the meat, much easier to get the meat to lay flat. Really speeds up the process. I have only used it a few times, so I can't comment as to how long it will hold up, but it seems sturdy.
